Diwali Special Pistachio Kheer 💚✨ Diwali desserts deserve to be a little extra! Rich, creamy pistachio kheer with saffron, crunchy pistachios and silver varq, all slow-cooked in @cuminco_india’s Dutch oven. What I love about this Dutch oven is that it’s made for slow cooking, but looks beautiful enough to go straight from the stove to the Diwali table. No transferring to another serving dish! Ingredients Pistachio Kheer * Full-fat milk – 1.25 litres * Basmati rice – 55g (about ¼ cup) * Pistachio cream – 160g * Sugar – 20g (about 1½ tbsp) * Cardamom powder – ¼ tsp Garnish * Chopped pistachios – ¼ cup * Saffron – 12–15 strands * Edible silver varq – 1 small sheet How to make it Wash and soak the basmati rice for 20–30 minutes, then drain. Bring the milk to a gentle simmer in @cuminco_india’s Dutch oven. Add the rice and cook on low heat, stirring occasionally, until the grains are soft and the milk has reduced into a creamy kheer. Stir in the pistachio cream, sugar and cardamom. Cook for another few minutes until everything is well combined. Keep the consistency slightly loose, as the kheer will thicken while cooling. Finish with saffron, chopped pistachios and edible silver varq. Serve it straight from the Dutch oven for a beautiful Diwali centrepiece! And that’s what makes @cuminco_india’s Dutch oven so useful.
