Hyderabadi Chicken Biryani ✨
Joining the #CuminCoParty with our biryani made in our @cuminco Kairi dutch oven 🫶🏻

Ingredients:

For the Chicken Marinade:

- ½ kg bone-in chicken
- 120 g thick curd
- 1 tbsp ginger-garlic paste
- 1 tbsp hot red chilli powder
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp roasted cumin powder
- ½ tsp garam masala
- 1½ tbsp lemon juice
- Salt to taste
- 3 tbsp oil
- 2 tbsp ghee
- ½ cup mint leaves
- ½ cup coriander leaves
- 4–5 green chillies, slit
- 2 large onions, thinly sliced and fried until golden

For the Rice:

- 500 g aged basmati rice
- 4–5 litres water
- 2 bay leaves
- 5 green cardamoms
- 2 black cardamoms
- 6 cloves
- 2-inch cinnamon stick
- 1 tsp shahi jeera
- Salt to taste
- 1 tsp shahi jeera
- 4-5 cloves
- 1 inch cinnamon stick

For Dum:

- ¼ tsp saffron strands
- 4 tbsp warm milk
- 4 tbsp ghee
- Remaining fried onions
- Extra mint and coriander leaves

Method:
- Thinly slice the onions and fry in oil until deep golden brown. Drain and set aside.
- Mix the curd, ginger-garlic paste, spices, lemon juice, salt, oil, ghee, mint, coriander, green chillies and half the fried onions. Add the chicken and coat thoroughly. Refrigerate for at least 2–4 hours.
- Wash the basmati rice until the water runs mostly clear. Soak for 30 minutes. Bring water to a boil with the whole spices and salt. Add the rice and cook until approximately 70% done. Drain immediately.
- Spread the marinated raw chicken evenly in a heavy-bottomed handi. Layer the partially cooked rice over it. Top with the remaining fried onions, mint, coriander, saffron soaked in warm milk and ghee.
- Cover tightly with a lid. Cook over medium heat for 8–10 minutes, then place the handi on a preheated tawa and cook over very low heat for another 10-15 minutes, until the chicken is fully cooked.
- Turn off the heat and let the biryani rest, covered, for 10–15 minutes. Gently mix the rice and chicken without breaking the grains.
- Serve hot with raita or salan.
