Ingredients

For Boiling the Chole:

* 1 cup Chickpeas (Chole), soaked overnight
* 1 tsp Tea Leaves
* 2 Green Cardamoms
* 1 Black Cardamom
* 1 Star Anise
* 5–6 Black Peppercorns
* 2 Cloves
* 1 small piece Mace (Javitri)
* 1 small Cinnamon Stick
* Salt, to taste
* Water, as required

For the Chole Masala:

* 2 tbsp Oil
* 1 tsp Cumin Seeds
* 1 Bay Leaf
* 1 medium Onion, finely chopped
* 1 tbsp Ginger-Garlic Paste
* 2 medium Tomatoes, pureed
* 1 tsp Red Chilli Powder
* ½ tsp Turmeric Powder
* 1 tsp Coriander-Cumin Powder
* 1½ tsp Chole Masala
* Salt, to taste

For Garnishing:

* Fresh Coriander, chopped
* Kasuri Methi
* Ginger Juliennes
* Green Chilli, sliced
* 1 tsp Ghee
